A new drink now to go with Jelgava's special dishes print
The special dishes of Jelgava - main course "Dukes sail" and dessert "Charlotte's kiss" are now supplemented with a refreshing drink - "Jelgava's bellini".

One of the main ingredients of the drink is sea-buckthorn juice which is also used in Jelgava’s special dishes "Dukes sail" and "Charlotte's kiss". The recipe is the work of the chef of family restaurant "Hercogs" Andris Rūmītis together with Arnis Bikšus.

A. Rūmītis tells that Jelgava’s special dishes are very popular with the clients of the restaurant which gave the idea that a cocktail would be a great supplement. From now on the cocktail will be available at restaurant “Hercogs”.
 
 A Bellini is a long drink cocktail that originated in Venice. It is a mixture of sparkling wine and peach purée often served at celebrations. It is one of Italy's most popular cocktails.

The recipes Jelgava’s special dishes "Dukes sail" and dessert "Charlotte's kiss" were created by chef specialty teachers of Jelgava Crafts High school Aina Tāluma and Ligita Ziemele together with their pupils. The dishes remind of the rich history of Jelgava which once was the capital of Courland Duchy. The dishes were served on XIV International Ice Sculpture Festival which took place on February of 2012.

Jelgava’s bellini
 
Ingredients (4 servings):
  • canned peaches 2 pcs.
  • sea-buckthorn juice 40 ml
  • crushed ice
  • sparkling drink (e.g. ”Mežezers”, „Rīgas šampanietis” or any sparkling wine)
Instructions:
  • pour peach purée in a champagne glass
  • add sea-buckthorn juice
  • add crushed ice till the glass is half full and stir 4 times
  • add sparkling drink and stir once
  • decorate the glass with a fresh strawberry
